I think this has been mentioned before (I believe IMC posted what sounded like a delightful low-fat recipe for fish? Was it something else? Fuck, I never tried it, but it sounded delicious) - but I'm inclined to start a new thread with some easy-to-make recipes. First and foremost, I purchased two crock pots in less than a week's time, and this has led to some of the most fantastic main dishes to ever come out of my kitchen - ever. (I'm not counting my obvious mastery of the BBQ outside, after all, I AM MAN - I WILL COOK WITH FLAME.) Regardless, the Crock Pot has opened up a whole new avenue of 'leave it overnight and it'll turn out just fucking dandy in the morning' opportunities. Brisket: Trim it as desired, then rub the slab with powdered onion soup mix. Go ahead and use a whole packet for a decent sized brisket. For an extra bit of flavor, rub it with a fresh minced garlic clove first. Then place it in the Crock, add a can of beef broth (substitute beef boulion (sp?) if necessary) - but make sure to add the liquid to the crock before the meat, or you'll wash off all the seasoning. Let it cook overnight on low and not only will your house smell fucking fantastic the next morning (covering any pot fumes from the night before, coincidentally), but you'll be left with the most tender chunk of brisket you've ever let melt in your mouth. Another note: The fat that cooks out of the brisket will be suspended in your broth - if you refrigerate it, it will all rise to the surface, coagulate into a solid mass, and be easy to seperate and throw away, for us health-concious folks here. (For those unfortunate enough to not have a Crock Pot, which I was up until a couple weeks ago, you can use the same recipe and look up cooking times for a conventional oven in a roasting pan with lid) I've got the most amazing fish fry batter recipe, but I can't remember one of the three ingredients off the top of my head - believe me, it sounds crazy when you first hear about it, but it will fucking floor you (and such odd ingredients, too). Will post as soon as I can find my notes. Here's an excellent fucking chip dip - a recipe that I've never shared before, as simplistic and easy to make as can be: Take a can of that Nacho Cheese (it's a viscous liquid, the same shit they use on concession stand nachos, possibly not available in the Northern states, I dunno), one can of Wolf Brand chili, (and this is my addition - a can of refried beans) - put all that shit in a Crock, or in a pot on low heat on the stove, add as much spice as you can handle, and serve it hot as a chip dip. The original recipe called for browned ground beef, seasoned to taste, and I'll admit - it ends up tasting better, but it's more time consuming. If you've got the extra time to spare, go the ground beef route, but be sure to spice it up with some Cumin and peppers. So, what's cooking in your kitchen?
I have been working on and trying to perfect my own recipee called Spagetti Pizza. I have seen simular recipees but mine is easy makes a big cassarole that I can eat on for a week, and I think it is pretty good. Also another big hit got me lately" Tortillas I like the Low Carb ones with spices in the tortilla Use the Sweet Spicy Starkist (the Albacore white tuna taste like crap) Crumbled Feta Cheese Any ole ranch dressing will do Any ole salad in a bag chopped into small bits. Mix each of these ingredents all on a tortilla roll it up and enjoy. Takes less than a minute if your salad is already chopped up. Also use that same sweet n spicy tuna on your favorite crusty toasted bread. (I like sourdough) top it with Thick sliced bacon (the salt cured type) and swiss cheese.
